The pan gets all the attention and the lid causes most of the failures. A buffet tray that arrives with sauce in the bag, a fogged-up display dome, fried chicken that steamed itself soft in transit: those are lid problems, and they are cheap problems to fix, because the most expensive lid in the aluminum program runs under 50 cents at case pricing. This guide covers the three lid constructions that fit aluminum pans, what each one tolerates, and how to match them to rounds, half steams, and full steams.

The three constructions
Every lid that fits an aluminum pan is one of three things.
Foil laminated board (usually listed as a “board lid”): a die-cut paperboard disc or rectangle with a foil face laminated on. It friction-fits inside the pan’s rim curl, sits dead flat, and gives you a rigid deck you can stack on and a surface you can write on with a marker.
Formed foil: a stamped aluminum lid, the same material family as the pan. It crimps down over the rim by hand and is the only construction that goes wherever the pan goes, including the oven and the steam well.
Clear plastic dome: a thermoformed clear lid that snaps onto the rim. It exists for one reason, which is that the customer can see the food. Everything else about it is a compromise.

Oven and steam-table compatibility
This is the spec that gets operators in trouble, so here it is plainly.
Formed foil is the only lid you can cook under. Roast covered, hold covered in the steam well, finish covered under heat: all fine, because the lid is the same aluminum as the pan. This is why the half and full steam lids in our program are formed foil, no board or dome option. Steam pans live in heat, so the lid has to.
Board lids tolerate hot food contact and short time in low-temperature warming equipment, but the paperboard core scorches at roasting temperatures. The correct workflow is cook uncovered or under foil, then lid with board for holding and transport. Do not send a board-lidded pan into a 350 degree oven and expect the lid to come out intact.
Dome lids get no heat at all. They are clear plastic and they deform at oven and steam-table temperatures. Cold food, room-temperature food, or hot food lidded at the last second for immediate handoff: that is the entire approved use list.
Fit by pan size
Lids are matched parts, not accessories. The lid seats on the pan’s rim curl, and curl dimensions vary by manufacturer even when the nominal size matches, so a 9 inch lid from one line will not necessarily seat on a 9 inch pan from another. Buy them matched. Our lineup is built so the fits are unambiguous:

The case counts pair 1:1 on purpose: one case of pans, one case of lids, ratio stays matched through the whole order cycle.
Two pricing details worth knowing from the current catalog. At the 7 inch size the plastic dome actually prices slightly under the board lid per case, so choosing dome for display costs you nothing there. At 9 inches it flips and board is the cheaper lid. And on full steams, the formed foil lid runs about half the unit price of the deep pan itself, which surprises buyers who budgeted the lid as a rounding error.

Stacking for catering transport
Catering economics assume stacked pans: in the van, on the cart, in the Cambro. The lid is what makes the stack work, and the three constructions behave very differently under load.
Board is the transport king. The rigid flat deck spreads the weight of the pan above it, the stack stays square, and the top lid of every stack is a labeling surface. Write the item, the allergen flags, and the reheat instructions right on it.
Formed foil stacks well once crimped, and for steam pans it is the only choice anyway. Crimp all four sides, then stack. The one caution: the crimp is single-use in practice. Open a foil lid at the venue to check the food and the re-crimp is never as tight, so train staff to check by lifting one corner only.
Dome lids do not carry a stacked load. The dome flexes, contacts the food, and transfers weight through whatever is underneath it. If dome-lidded product must travel, it travels in a single layer.
When the lid matters more than the gauge
Buyers agonize over pan gauge and then grab whatever lid is on the shelf. That is backwards for transport-heavy operations. A heavy-gauge pan with a loose or unseated lid still dumps jus into the delivery bag; a mid-gauge pan with a properly crimped formed foil lid arrives clean. The pan’s gauge determines whether the pan survives handling under load (full breakdown here), but the lid determines whether the contents stay in the pan. Spend the upgrade money on the lid fit first, gauge second, and if the budget covers only one upgrade, the sequence is: matched lid, then heavier gauge.
The exception is single-use oven work with no transport, where the lid barely matters and gauge is everything. Match the spend to the failure mode you actually have.
Venting and condensation
Hot food under any lid generates steam, and steam has to go somewhere. Where it goes decides how the food arrives.
Sealed tight, steam condenses on the lid’s underside and drips back. For braises and saucy entrees that is harmless, even helpful. For anything fried, roasted crisp, or sauced-on-top, it is the classic soggy-arrival failure. The fixes, in order of effectiveness:
- Vent the crimp. On formed foil lids, leave one corner uncrimped, or tent the center up. Enough steam escapes to stop the drip cycle without losing meaningful heat over a 30 to 45 minute transit.
- Use board on rounds. The paperboard face absorbs a modest amount of condensate instead of dripping it back. This is why fried chicken programs run board-lidded rounds almost universally.
- Flash-cool before doming. Dome-lidded display product should be lidded after the steam flash is off the food, or the dome fogs and the display value you paid for disappears.
Combos or separates
The 7 and 9 inch rounds are available as pan-plus-lid combo cases, with either the board lid or the dome lid packed in. Combos solve the ratio problem: bases and lids arrive together, deplete together, and reorder as one SKU. At case pricing a 7 inch board combo works out to roughly 9 cents per complete set, and the dome combos come in 250-count cases against 200 for board.
Run separates instead when one pan serves two programs, for example dome lids on the grab-and-go case and board lids on delivery orders from the same 9 inch round, or when your lid attrition genuinely differs from pan attrition. Mixed programs should stock the pan heavy and split the lid order.
